Strawberry Fluff Pie & Parfait

Whipped Cream
Graham Cracker Crumbs OR Graham Cracker Pie Crust
32 oz Strawberry Yogurt (blended)
2 pkgs Instant Vanilla Pudding Mix
Mix Yogurt and Pudding and refrigerate.

Pie Version...
After mixing the yogurt and pudding mix. Put in the pie shell. Top with as much whipped cream as you like. Sprinkle some graham cracker crumbs and sliced strawberries on top.

Parfait Version...
Find 4-6 8oz decorative glass tumbler glasses
Cover bottom of glass with graham cracker crumbs
Make 2-3 layers of yogurt mix and whipped cream.
Top with whipped cream, graham cracker crumbs and a fresh strawberry.

The Most Awesome Sugar Cookies

I love SOFT sugar cookies. And have had a really hard time finding a great recipe. I found a recipe and tweeked it a little.

1 Cup Sugar
1 Cup Melted Butter
1 tsp Vanilla Extract
1 tsp Almond Extract
1 Large Egg
1/2 tsp Baking Soda
1/2 tsp Baking Powder
2 1/3 Cups Flour

Mix the ingredients in the order listed above. Mix the sugar and butter, then mix in the vanilla extract, mix in Almond extract then the egg, followed with the baking soda and baking powder and finally the flour.

Bake at 375 degrees F for approximately 9-11 minutes.

Couple things that I did...

After mixing the ingredients let the dough rest for a while or put in the fridge for about 1/2 hour.

Spray your pans with some pam cooking spray.

I used a 1oz ice cream scoop.

After putting the cookie balls on the pan, take a cup and dip the bottom in some sugar and then gently press down the cookie.

If you like your cookies crispy then bake the cookies til the edges are golden. Since I like mine soft, I pulled them out as soon as one small spot was hinting the golden brown.

After cooling completely, take your favorite vanilla icing and top the cookies.
If you like add sprinkles too.

The almond extract can be substituted for additional vanilla or lemon or any flavor you might like.

Italian Chicken

EASY...

Use your favorite frozen or thawed boneless skinless chicken breasts.
Creamy Italian Dressing.
Pour Dressing over chicken, approximately 1/8 - 1/4 cup per piece of chicken.
cover with foil
Bake at 350 for 60 minutes if thawed or 90 minutes if frozen.
Baking time will depend on if you layer your chicken and how much chicken you are cooking.
I use a single layer with no over lapping.

Serve with Rice.

The chicken and dressing makes a great sauce to put over rice.

Variations...
Add some butter for a more rich creamy flavor. I use no butter and it tastes great.

Recipes

I figured it was time to start getting my recipes out there that I use on Wednesday Nights. Some are simple, some are not so simple. I will try to provide home versions as well as large groups versions. Since I usually make large portions for Wednesday Nights, you can see where some of the recipes will look very large and some cooking techniques are changed a little to accommodate what I use in the WLBC kitchen.

1st Simple Recipe
Peach Cobbler

I used a "Full Size" 2 1/2 inch deep stainless steel pan. (12 x 18 x 2.5")
Preheat the oven at 350 degrees
I used 1 1/2 #10 Cans (6 lbs 10 oz) sliced peaches
Drained off approximately 2/3rds of the juice
I poured those into the pan first
Mix 3 Cups Sugar, 3 Cups Flour, and 3 Cups Milk
Pour batter over peaches
Bake Uncovered til golden brown and the batter is firm in the peaches.
(Approximately 90 minutes)
Let stand at room temperature for about 30 minutes
Serve warm with Vanilla Ice Cream
